Paneer in spicy gravy
Here is the recipe for paneer cubes in a spicy gravy.
Ingredients:
250gm of paneer cubed
2 onions chopped
1 cup of milk
1 cup tomato puree
fistful of cashews
2 tsp grated coconut
2 garlic cloves
1″inch ginger piece
2 green chillies chopped
1tsp dhaniya powder
1tsp jeera powder
1/2 tsp garam masala
pinch of turmeric
salt to taste
For seasoning:1tsp mustard seeds
1tsp jeera (jeelakarra, cumin)
pinch of hing (inguva, asafoetida)

For garnishing:
Few sprigs of fresh coriander
Preparation:
In a skillet add one tea spoon of oil and fry the paneer cubes. Transfer them into a bowl with kitchen paper and keep aside. Blend the onions, cashews, ginger, garlic and green chillies to a smooth paste in a blender.
Procedure:
In a skillet, first do the seasoning with a little oil and then add the above prepared paste to it and saute for a few minutes till the paste leaves its raw smell.
Add grated coconut and the tomato puree and saute for a minute.
Add turmeric powder, salt, other masalas and mix well.
Finally add the paneer cubes.
Add a cup of water and cover with a lid. Cook it on a low flame and stir occasionally for a few minutes till the paneer cubes absorb the gravy. Once the curry is done, add the cup of milk and cook for a few minutes till the gravy thickens and put off the stove.

Before serving garnish with some fresh coriander.
