Egg curry
Recipe for Egg curry:
Ingredients:
Eggs- 4
Onion- 1 (big)
Tomato- 1 (big)
Peanut paste- 3 tsps
Tamarind paste- 1 tsp
Green chillies- 2
Mustard seeds- 1/2 tsp
Cumin- 1/2 tsp
Garam masala- 1/2 tsp
Coriander powder (dhaniya pwd)- 1 tsp
Ginger- garlic paste- 1 tsp
Pinch of turmeric
salt to taste

Procedure:
- Boil the eggs.
- Remove the outer skin, and make small cuts with a knife.
- Heat a spoon of oil in a pan and fry the boiled eggs.
- Remove them on to a plate with kitchen paper and keep aside.
- Chop the onions into small pieces.
- Cut the tomato into few big chunks.
- Chop the green chillies into small pieces.
- Again heat little oil in a pan, add the mustard seeds, cumin, green chillies and wait until they splutter.
- Add the ginger- garlic paste and saute for a minute, till it leaves the raw smell.
- Add the chopped onions and fry till they turn to light brown.
- Add the tamarind paste and fry for a minute.
- Add the chopped tomatoes and saute till they turn mushy.
- Add the peanut paste and fry for few minutes, till it leave the raw smell.
- Add the coriander powder, turmeric, garam masala and mix well.
- Adjust the salt according to your taste, add the fried eggs and a cup of water and cover with a lid.
- Cook over a low flame, till the eggs absorb the juice well.
- Put off the stove, and serve it hot, with some steamed rice or rotis.
