Carrot Halwa (gajar ka halwa)

Ingredients:

Carrots-1 kilo
Sugar-1 cup
Milk-1 cup
Cardamom powder-2 spoons
Dried fruits-1 cup
Ghee-1 cup
Saffron-1/4th spoon (optional)

Procedure:

  • Grate the carrots.
  • In a pan, add the ghee and fry the grated carrots, till they leave the raw smell, over a low flame.
  • Add the cup of milk and cook the carrots over medium heat until all the milk gets dried up.
  • Stir the mixture occasionally to prevent any sticking.
  • Add sugar, cardamom powder, 1/4 cup dry fruits and continuously stir for 5-7 minutes.
  • Add saffron , soaked in a spoon of boiling milk to the above stuff.
  • Add the remaining ghee.
  • Stir well and fry on low heat until ghee starts separating.
  • Decorate with remaining dry fruits and serve hot or chilled.(Tatses good both ways).
