Alu Paratha(Wheat bread with potato stuffing)

For dough:
2cups wheat flour
salt to taste
1 glass of butter milk
For stuffing:
2 medium potatoes
1 big onion chopped to very small pieces
2 tsp lime juice
1 tsp dhaniya powder
1 tsp garam masala powder
1 tsp red chilli powder
3 to 4 green chillies chopped to pieces
1/4th cup chopped fresh coiander
Pinch of turmeric
salt to taste
Ghee or butter for roasting the parathas
(To make them more spicy, you can add a teaspoon of ajwain in the dough while kneading and add some mint leaves along with coriander in the stuffing.)

Preparation:
Dough:
- Mix the wheat flour, salt and butter milk and knead well.
- Make a soft dough and keep it in an air tight container or cover it with a wet cloth and leave for 30min.
- Give sometime for the dough to set well. (using milk or butter milk instead of water makes the bread soft, whether it is roti, phulka or paratha)

Stuffing:
- Boil the potatoes, peel the skin and mash them completely.
- Add the chopped onions, green chillies, dhaniya powder, garam masala, red chilli powder, chopped coriander, salt and lime juice and mix well.

Procedure for parathas:
- Divide the dough into 6 to 8 equal portions.
- Take one portion of it and roll it to the size of a small poori.
- Apply some ghee or oil using a brush or with hand over the surface of it.
- Take a small portion of the stuffing and place it the centre of the roti and seal it from all sides.
- Pat it in flour slightly and then slowly roll it from all sides.
- Make sure, that the edges of the paratha are thin.
- Heat a tava (roasting pan) and place the paratha on it and roast it till you see some brown spots over it.
- Then apply some ghee or butter and turn it the other side. and repeat the same.



Serve it with some sweet curd. You can also have it with achar (pickle) of your choice.
