Vegetable Biryani

Recipe for Vegetable biryani:

Ingredients:
Basmati rice- 2 cups
Soya chunks- 1 cup
Potato- 1 (cubed)
Greenpeas- 1 cup
Carrot- 1 (cut lengthwise)
Onion- 1 (cut lengthwise)

Green chilies- 3 (cut lengthwise)
Ginger-garlic paste- 2 tsps
cloves- 3 or 4
Cashews- fistful
Cinnanom- 1 small piece
cardamom- 4 or 5
Bay leaves- 2

Procedure:

  • Heat little oil in a pan, add green chillies, cashews, cloves, cinnanom, bay leaves, cardamom and fry for few minutes, till the spices release their aroma.
  • Add the chopped onions and saute till they leave the raw smell.
  • Add all the vegetales and saute for few minutes.
  • wash the rice and add to the vegetables and fry for few minutes, till the rice is well coated with the spices.
  • Add salt according to your taste and mix well.
  • Add four cups of water to the stuff and mix well.
  • Cover with a lid and cook on a low flame.
  • Stir ocassionally, to avoid burning.

Do not stir too many time, as it may make the rice more like a mash rather than being fluffy.

Serve the biryani, hot, with some raita or kurma.
