Vegetable Upma

Recipe for Vegetable Upma:

Ingredients:
Sooji/Upma rava- 1 cup
Onion- 1
Tomato- 1
Potato- 1
carrot- 1
green peas- 1/4th cup
Ghee- 2 tsps
Pinch of turmeric
Salt to taste.

For seasoning:

Mustard- 1 tsp
Cumin- 1 tsp
Urad dal- 1 tsp (minapappu)
chana dal- 1 tsp (senaga pappu)
curry leaves- 8 to 10
Ginger- small piece (finely chopped)
green chillies- 2 (finely chopped)
Cashews- fistful

Procedure:

  • Chop all the vegetables listed above finely, to small pieces.
  • Do the seasoning, in a pan, adding little oil, with the above listed ingredients.
  • Add the chopped onions, and saute till they leave the raw smell.
  • Add the turmeric and saute for a minute.
  • Add the chopped potato, carrot, tomato pieces and the cup of green peas.
  • Add the salt according to your taste and saute well for few minutes, till they mix well.
  • Add two cups of water, mix well and cover with a lid.
  • Cook over a low flame, till all the veggies are well cooked.
  • Now add the ghee, to the boiling water and quickly add the sooji.
  • While adding the sooji, stir continuously and quickly, to avoid lumps.
  • Once the sooji mixes well, with the vegetables, put off the stove, as it doesn’t take much time for sooji to cook.

Serve it hot, with some chutney or pickle. It tastes good even with sugar.
