Alu tikki (Potato cutlets)
Recipe for Alu tikki (Potato cutlets):
Ingredients:
Potatoes- 2 (big)
Onion- 1 (finely chopped)
Carrot- 1 (grated finley)
Bread crumbs or powdered rasku- 3 to 4 tsps
Coriander powder- 2 tsps
Green chillies- 2
Red chilli powder- 1 tsp
Lemon juice- 2 tsps
Coriander leaves- 2 tsps (chopped)
Salt to taste

Procedure:
- Boil, peel and mash the potatoes completely, without any lumps.
- Add the chopped onion, grated carrot, bread crumbs or powdered rasku,lemon juice, coriander powder, chilli powder, chopped green chillies and coriander, and adjust the salt to your taste.
- Mix all the ingredients well and divide the mash into equal portions.
- Shape them to small rounds and press each potion to a round patty.
- Heat a tava or a flat roasting pan.
- Grease it with a spoon of oil.
- Place each patty on the greased tava and roast them.
- Once they turn to brown colour, turn them slowly, on to the other side and roast them again.
- Repeat the same process, and roast the remaining patties.
- Serve them hot , with some ketchup.
