Tomato Rice
Recipe for Tomato Rice:
Ingredients:
Basmati rice- 1 cup
Tomatoes- 2 ( chopped to big chunks )
Green peas- 1/4th cup ( frozen)
Onion- 1 ( medium ) ( chopped lengthwise )
Mustard- 1 tsp
cumin- 1 tsp
Cashews- 1/4th cup
Urad dal- 1 tsp
green chillies- 2
Curry leaves- 10
Ghee for frying
Pinch of turmeric
salt to taste

Procedure:
- Wash the rice and cook it in a pressure cooker.
- Spread it on a plate and allow it to cool, so that the rice would be fluffy (When mixed hot, rice turns mushy).
- Now heat a skillet and add three to four spoons of ghee.
- Add the mustard, cumin, urad dal and cashews and wait, until the popping sound is heard.
- Add the chopped green chillies and curry leaves.
- Add the chopped onions and saute, till they leave the raw smell and turn soft.
- Add the chopped tomatoes and fry , till they turn soft.
- Add the green peas and saute for a minute.
- Add a pinch of turmeric and salt to taste.
- Now, add the cooked rice to the pan, and mix all the ingredients well and fry for a minute.
