Ulli garelu ( onion vadas)

Recipe for Ulli garelu:

Ulli garelu with palli(peanut) chutney
Ingredients:

Urad dal (Minapappu)- 2 cups
Onions- 2 (big)
Green chillies- 3 or 4
Ginger- small piece
Fresh coriander- 1/4th cup
Salt to taste
Oil for frying

Procedure:

  • Soak the urad dal for about 3 hours.
  • Grind it coarsely to a batter of thick consistency unlike idli batter.
  • Chop the onions finely into very small pieces.
  • Chop the green chillies also finely and grate the ginger.
  • Add the chopped onions, chillies, ginger and coriander to the batter.
  • Adjust the salt to your taste and mix all the ingredients well.
  • Heat a deep frying pan and add the oil.
  • Once the oil is hot enough for frying, keep a cup of water by your side and wet your palm.
  • Take the batter on the wet palm, make a hole in the middle of the batter with your thumb and slowly put the dumpling in the oil.
  • Lower the flame and fry the vada until it turns brown.
  • Transfer it into a bowl with a kitchen paper.
  • Repeat the same procedure for the rest of the vadas.
  • Serve them hot accompanied by some coconut chutney or palli chutney or ginger pickle.
