Brinjal curry

Ingredients:
Brinjals- 5 to 6 (medium sized)
Onion- 1 (big)
Tomatoes- 2
Pinch of turmeric
Green chillies- 2
Fresh Coriander- 1/2 cup
Curry powder- 1 tsp
Chilli powder- 1/2 tsp
For Seasoning:
Mustard- 1 tsp
Cumin- 1 tsp
Chana dal- 1 tsp
Procedure:
- Cut the brinjal to cubes and onions lengthwise.
- Slit the green chillies.
- Chop the tomatoes to big chunks.
- Do the seasoning with the above listed ingredients.
- Once the popping sound is heard, add the green chillies and onions.
- Saute until th e onions turn soft and leave the raw smell.
- Add the brinjal cubes, saute for two minutes and cover with a lid.
- Let them cook for few minutes.
- Add the tomatoes, turmeric, salt, chilli powder, curry powder and fresh coriander.
- Mix all the ingredients well, and cook, until the brinjals turn tender and tomatoes turn mushy.
- Put off the stove and leave it covered for five minutes, for the brinjals to catch the flavours.
- Serve it with steamed rice with a slight touch of ghee. It goes well even with rotis.
